While you are using one of our many cleanses, you have to avoid certain foods, including rice paper wraps. Those rice paper wraps can be tricky to use, as they tend to stick to themselves or tear easily. Allow us to remove them from the equation and replace them with sturdy, raw collard greens for this recipe. Roll up the different vegetables as tight as you can and then dip the wraps in the highly addictive almond butter sauce. Not only are these wraps backed to the gills with nutrients, but they are also bursting with flavor. Trust us when we tell you that dipping sauce is life!

As a quick note, you can use rainbow chard or Swiss chard if you cannot find raw collard greens. If you prefer the taste of chard to collards, go with chard instead. Both greens serve as great wraps that hold up nicely with all of the ingredients inside. Additionally, if you want sauce in every bite and don’t want to dip the wraps, pour some of the dipping sauce on the ingredients in the wraps before rolling them up. Speaking of the filling ingredients, you can swap those out with others that you prefer. Do you prefer carrots instead of red bell peppers? Swap them out!

Once you have all of your ingredients prepped, make sure to lay them out on a work station so they are easily accessible when you roll up the greens. Additionally, remove the ends of the thicker stems from the greens, as those stems are fibrous and bitter. You can open the leaves and roll up the ingredients like a burrito, or you can fold the leaves in half, line up the ingredients, and roll them up that way. Roll as you please, but make sure that you do one thing: Enjoy the meal!

Trust us when we tell you that these vegetable nori wraps are so creamy and delicious. Not only do they provide you with an array of textures, but they also deliver sweet and savory flavors. There is an art to assembling a nori roll. First of all, when you are following a raw vegan diet, you want to make sure that the nori sheets are not roasted or flavored. They do sell raw nori sheets, so make sure you purchase those. Now, the last thing you want is for the actual nori sheet to get soggy when you roll up the contents. For this reason, lay the lettuce down first to act as a barrier between the nori sheet and the cashew cream. You can then lay down a couple other ingredients, followed by another drizzle of cashew cream. After one more layer of ingredients, you are ready to roll.

Ideally, you want to assemble all of the ingredients on one end of the nori sheet. You can then roll it up like a burrito, making sure to tightly wrap it to avoid spilling out the sides. If some ingredients fall out, don’t worry. Wet the very end strip of the nori sheet so that it can seal the roll. Wet your sharpened knife to cut the roll in as many pieces as you like. Make sure to wipe your knife between cutting rolls.

Each bite of these wraps is better than the last. It’s as though you taste a new flavor or ingredient each time you sink your teeth into them. If you’re lucky, you get the ultimate bite that contains every single ingredient. Are you capable of such a feat? Only time and your wrap assembly skills will tell. If you really want to take the wraps to another level, place them in a pan over medium heat after you roll them up. This will help crisp up the outside and create a seal that decreases the likelihood of them falling apart while you eat.

Before you can make the wraps, you have to make the pickled onions. This seems like a time consuming step, but it’s very easy and extremely rewarding. You can make more and enjoy them on tacos, salads, or even Buddha bowls. All you need to do is boil water, apple cider vinegar, and sea salt, and then pour that mixture into a heat-safe glass jar with your sliced red onion. Add some agave for sweetness, screw on the top, and refrigerate until you are ready to enjoy. Meanwhile, prepare the rest of the ingredients for your wrap.

After chopping the lettuce and tomato, you can prepare your zucchini. Slice them lengthwise and sauté in a pan with olive oil. Make sure to season with sea salt, pepper, and garlic powder on both sides. Cook until browned on both sides (about three minutes per side). Cut the zucchini into bite size pieces and get read to assemble your wraps. Spread an even layer of hummus on your lavash bread and then line up the zucchini, tomatoes, lettuce, and pickled onions on the side closest to you. Roll up like a burrito, slice in half, and enjoy!

Get ready for the spice because there’s no stopping it with this sauce. It’s an amazing hot sauce recipe that is completely raw vegan. It’ll light your fire and possibly cause some panting. It serves as a tasty condiment, but you can also use it as a dip for raw vegetable sticks or dehydrated zucchini/kale chips.

This sauce looks similar to a classic salsa verde (green salsa), and it’s just as hot and tasty. You can control the spice level by adding more or using fewer peppers. The number of peppers you use may also depend on their size and variety. For example, you may only need 6 larger jalapeños, but 10 smaller jalapeños may be necessary to yield the amount of sauce you desire. If you decide to use serrano peppers or habanero peppers, you’ll have to judge how many you want to include in the sauce. Be careful with hotter peppers! Additionally, you can remove the seeds to tame the spice level if you want to use peppers that have a higher Scoville rating.

The Scoville scale is a measurement of the pungency or heat of a chili pepper. Scoville Heat Units (SHU) are based on the concentration of capsaicinoids in the pepper. A pepper’s Scoville rating is based on dry mass and chili peppers can range in pungency in worldly cuisines. The heat rating goes from 100 or less (sweet peppers) to over three million (Pepper X). The spiciest chilis rank higher than one million Scoville units and may induce sweating, panting, or possible heartburn or digestive discomfort. This is all knowledge for you to have as you go forth and blend this raw hot sauce into existence.
