Get out your green clothes, and your green vegetables, because it’s St. Patrick’s Day! Even if you don’t subscribe to “wear green or get pinched” law, you can still get down with some comforting, home-cooked, hearty and traditional Irish meals. While these meals aren’t specifically reserved for St. Patrick’s Day, we’re happy to give you an excuse to make them.

A Little History Of Old St. Patrick

You may need to brace yourself for this one: St. Patrick was not actually Irish. Pause for shock. Patrick was born into a religious family around 400 A.D. in Britain. When he was 16 years old, Irish pirates kidnapped him and enslaved him in Ireland for 17 years. It was during this time that he rediscovered his faith. He eventually escaped, but found his way back to Ireland as a missionary, ready to die to make his mission successful.

St Patrick’s Day Fact: According to historians, St. Patrick’s color was in fact blue, not green. The use of the color green rose to popularity in the 1600s and 1700s, when the clover became the international symbol of St. Patrick’s Day.

What’s The Deal With Shamrocks?

The word “shamrock” comes from the Gaelic word seamrog, which translates to “little clover.” Botanists believe that the “true” species of shamrock is the White Clover, even though a clover is the common name for any plant belonging to the genus Trifolium, meaning “having three leaves.” Historically, St. Patrick used shamrocks to explain the Holy Trinity, but later interpretations have also used the three leaves to symbolize hope, faith, and love. If, by chance, there is a fourth leaf on a clover, it symbolizes luck.

There are many traditions and historical facts about St. Patrick’s Day, but we like to focus on how you can celebrate in the present. We love making food, so we are providing you with some tasty and traditional Irish recipes, vegan style. If you make the following recipes, let us know how you like them.

Your mother was right when she told you to eat your veggies because green vegetables are loaded with nutrients that can lower your risk of cancer, heart disease, and obesity. They are great for weight loss assistance because of the vitamins, minerals, and low calorie content. But how do you get them in your diet if you don’t want to eat salads all the time?

Sometimes you have to trick yourself into eating more greens. By “trick yourself,” we mean that you have to sneak them into dishes and mask their flavor. Blending them into your smoothies is one of the easiest ways to do that. You can use lettuce, cabbage, or collard leaves as taco shells, sauté some spinach and mix it in with mashed potatoes, or even make some stir-fry with green beans, broccoli, zucchini, leeks, cabbage, and more!

If you are trying to be a healthier person and incorporate vegan or vegetarian recipes into your life, it is very easy to do so on St. Patrick’s Day. The Irish have been celebrating the anniversary of the death of St. Patrick, the patron saint of Ireland, since the fifth century. There’s no reason we should put an end to tradition, which that is why we are giving you some of our favorite green recipes to make a feast. Try them out and let us know how you like them!

St. Patrick’s Day is filled with libations and festivities, and a whole lot of green. In fact, St. Patrick’s Day cookies, clothes, decorations, clover-shaped sunglasses, and plastic leprechaun hats hit store shelves immediately after Valentine’s Day. Outside of all the St. Patrick’s Day paraphernalia, most people don’t indulge in old-fashioned Irish food. People usually just consider Guinness or Jameson their meal for the evening.

Traditional Irish food is notoriously hearty and dominated with meat. Contrary to popular belief, a lot of Irish meals can be just as delicious if made without meat. A lot of dishes include nutritious vegetables that can do a world of good for you overall health.

Cabbage

Cabbage is one of the most featured items in Irish cuisine. When it comes to weight loss, cabbage is a great food choice because it is extremely low in calories. There are almost 20 different flavonoids and 15 polyphenols in cabbage, all of which help fight free radicals in the body. Additionally, cabbage helps lower bad cholesterol (LDL) levels!

Potatoes

Potatoes don’t often get credit for their nutrients, but they should! They are loaded with vitamin B6, potassium, copper, vitamin C, and many other nutrients. If you are eating potatoes in the form of oily French fries or in buttery mashed form, you should not expect to reap the health benefits. Potatoes even have blood-pressure lowering compounds, but you it is best to roast or sauté them with a little olive oil for those to work.

Parsnips

Parsnips often get mistaken for white carrots, but they are not. They are root vegetables that have a slightly bitter yet sweet taste, almost like a cross between a carrot and a radish. You can eat them raw or cooked in a stew or mash. They can help decrease your risk of diabetes, reduce cholesterol levels, and improve your digestion.

Those three ingredients are the power trio in Irish cuisine, but there are many more ingredients that you can use. To enjoy a healthy, vegan St. Patrick’s Day, we have three recipes below that’ll put you in a festive mood!

Roasted Cabbage with Lemon
