Are you ready to enjoy a homemade salsa that is every bit as spicy and delicious as it is chunky and smoky? Some people like smooth, pureed salsa, while others prefer the chunky salsas that you make in a molcajete. Is the salsa imperfect? Yes, but it’s also perfectly chunky, smoky, and full of flavor. Not everything that you make has to look like a work of art. Sometimes, foods or dishes that don’t satisfy everyone’s aesthetic appeal taste the best! That’s how we feel about this salsa.

A molcajete, in case you are unaware, is the Spanish word for mortar and pestle. The name comes from the Aztec words that translate to “seasoning” and “bowl.” A traditional molcajete varies slightly from your average mortar and pestle, though. It is made from volcanic rock and the hard, rough surface makes it easier to grind spices or mash different ingredients, for example, the pan-roasted ingredients for this salsa. Just make sure that you don’t add all of the ingredients to the molcajete at once. Start by mashing the onion and garlic, then follow that with the jalapeño.

Once you have a smooth paste of onion, garlic, and jalapeño, you can add the tomatoes, one or two at a time. Don’t overcrowd the molcajete, or you’ll have tomato juices flying all over the place. Add your chopped cilantro, cumin, sea salt, and black pepper and mix to combine. Serve with some sturdy chips that can support the weight of this homemade chunky salsa. It’s got a little kick, but not so much so that it overpowers the rest of the ingredients. If you like a spicier salsa, add two jalapeños!

An analytics survey found that a record 200.5 million U.S. adults plan to watch the big game. The game is important to 44% of viewers, with the halftime show being most important to 19% of viewers. Commercials interest 18% of viewers, and some people bet more on commercials than the actual game!

Stuff cilantro into the pickling jar as well and let the pickling commence!

Once all of your ingredients are in the jar, pour in the pickling solution and some pepper flakes and mustard seeds. Allow at least 24 hours for the flavors to do their thing at room temperature. After the first day, you can store the pickled radishes in the fridge. The flavor only gets better as the days go by!

Every now and again, you need to breathe a little fire. The heat is good for the soul! Fret not because this salsa is no where near as spicy as the One Chip Challenge. No Carolina Reapers, ghost peppers, habañeros, or other extremely hot chiles in this homemade salsa. This chile de arbol salsa has the perfect balance of a spice, acid, and a touch of sweet and smokiness from the cooked tomatoes and onions. It’s just one of the salsas that you can’t stop eating!

The great thing about this salsa is that it comes together within 20 minutes. Named for the peppers it uses, this chile de arbol salsa is more about depth of flavor than “knock you down” spice. Not only is it the perfect dip for chips, but it is also a great condiment for tacos, burritos, fajitas, and more. Should your taste buds be a bit more sensitive to spice, you can always reduce the amount of chiles you use to make the salsa. It does have a little kick that builds as you eat it, but it isn’t life-threatening. The tomatoes do a great job to mellow the flavor.

Chile de arbols come in dried form, so don’t just add them to the blender as is. In order to tame the spice, toast them in a pan for a couple minutes, but don’t burn them. If you burn the chiles, your salsa will taste very bitter. After toasting them, add water and bring the water to a boil. Remove from heat and then let the chiles soak for 15 minutes. That gives you enough time to cook the onions, garlic, and tomatoes. Drain the chile water and then add everything to a blender. Refrigerate to chill the salsa or enjoy right away!

Looking for a vegan meat substitute that isn’t manufactured in a lab? Forget the fake meat and starting cooking with portobello mushrooms! You can grill the entire caps and sandwich them between two slices of bread to make hearty sandwiches or burgers. Trying to steer clear of bread? Slice up portobello caps and sauté them with other veggies in a stir-fry, or make these vegan fajitas.

Like other mushrooms, portobellos exhibit an earthy flavor. You can counteract a bit of that earthiness by scraping out the undersides of the caps. Rinse them out and lightly scrape them with your fingers (it can be a good idea to wear disposable gloves for this) prior to slicing up the caps. If you really want that mushroom flavor to vanish, you have to season them properly and thoroughly. In the case of this recipe, you create your own taco seasoning by using a series of spices. The reason to avoid store bought taco seasoning is because it contains excess sodium, added flavors, and preservatives.

This fajita dish is very simple to make because all you have to do is thinly slice the bell peppers, red onion, and portobellos, season them, and bake them for 25 minutes. Make sure that you remove the pan halfway through the cooking process so that you can mix them up for even cooking. While the veggies are cooking, you can prepare the pico de gallo, which is very easy to make. Once the veggies are out of the oven, toast your corn tortillas and assemble your fajitas. Please enjoy!
