This pomegranate vinaigrette comes together with just a handful of simple ingredients, so you only taste what you include in the recipe.

This dressing requires pomegranate juice, but most bottled pomegranate juice contains added sugars and is processed. You can easily make your own pomegranate juice by blending pomegranate arils. Pour the blended mixture through a fine mesh strainer and you have fresh pomegranate juice! You will need about one cup of pomegranate arils to achieve the amount of juice necessary for the vinaigrette. Pomegranates are rich in antioxidants, vitamin C, and offer a uniquely sweet-tart flavor. To enhance the sweetness, though, we included a touch of grade A maple syrup.

Pomegranate is a seasonal fruit during late fall and early winter. The sweet-tart flavor lends itself to salads that contain spinach, arugula, raw pecans, pears, berries, or raw walnuts. Even though this is a vinaigrette, there is no vinegar on the ingredient list. Freshly squeezed lemon juice and orange juice take the place of the vinegar, giving you that acidic not you crave from a vinaigrette dressing.

The Waldorf salad has made a name for itself in the culinary world. Originally, it was a simple salad consisting of apples, celery, and mayo. Introduced on March 14, 1893, the Waldorf salad was served to guests at a charity ball honoring St. Mary’s Hospital for Children. Coincidentally, the Waldorf hotel opened the previous day, and the charity ball was the very first event to take place in the hotel.

Edouard Beauchamp, the Waldorf’s original executive chef, came up with the salad (and the rest of the menu) with Oscar Tschirky, the maitre d’hotel. Just three years later, Tschirky published a cookbook with the recipe for the historic salad. The simplicity of the salad may be the reason for its rise to fame. However, shortly after the salad’s introduction to the world, people began to elaborate on the original three ingredients. Over time, people added walnuts, oranges, marshmallows, and a few other items on occasion.

This salad does not contain mayonnaise, nor does it contain walnuts. It does, however, contain raw pecans, grapes, apples, dried cranberries, celery, and mixed greens. We used Granny Smith apples, but you can use Fuji, Honeycrisp, or Gala apples if you prefer those varieties. Similarly, you can swap out the red grapes for green grapes if you prefer the flavor profile.

A pinch of red pepper flakes would also give the sauce a little kick.

It is truly amazing how delicious and filling these raw collard wraps are. If you have an aversion to pecans or cannot eat nuts due to an allergy, you can always swap the nut or change to pumpkin or sunflower seeds. Should you want to swap out some of the filling ingredients, feel free to choose ingredients you like, so long as they are raw vegan!

Craving banana bread but don’t feel like baking or consuming more than a cup of sugar? These sweet little energy bites are exactly what you need. You can make them with only six ingredients in just 10 minutes. Not only are they vegan and gluten-free, but they are also great snacks for kids and adults alike. Keep them in the fridge and enjoy when ready, or make a big batch and store them in the freezer, taking them out whenever you want a snack.

Although this recipe calls for walnuts or pecans, almonds work too. Feel free to mix and match the nuts you enjoy for this recipe, so long as they total one cup. For the oats, we chose rolled oats, but you can use gluten-free oats if you don’t eat gluten. And to keep it vegan, the chocolate chips have to be dairy-free. If you cannot find dairy-free chocolate chips, you can use chopped dark chocolate, but the chocolate chips are recommended.

When it comes time to make the banana bread bites, start by adding the nuts to the food processor. Pulse until you achieve a crumbly consistency. Then you can add rolled oats, dates, banana, cinnamon, and vanilla extract and blend until grainy and broken down. At that point, add the chocolate chips and pulse until you get a sticky, dough-like consistency, stopping to scrape down the sides as needed. Form the mixture into little bite-size balls with your hands and refrigerate them to harden. You can place them in the freezer to accelerate that process, which helps you enjoy them quicker!
