These zucchini noodles are great no matter what time of year it is. Enjoy them as a refreshing side while grilling in the summer or let them satiate you as a nutritious entree during the fall. The spiralized zucchini noodles are tossed with fresh herbs, garlic, seasonings, apple cider vinegar, and olive oil, in which they marinated for a little while before serving. Marinating the zoodles helps to intensify the flavors and make the raw vegan entree that much more enjoyable.

In order to make this recipe, you need a spiralizer. You can use a handheld one, but the type with the hand crank is a little more durable and reliable. Once you have your zucchini noodles, place them in a bowl and toss with a couple pinches of sea salt. Allow them to sit like that for about 30 minutes, as this process helps to draw out the water. Naturally, while the zoodles are sitting in that bowl, you can prepare the marinade by mixing all of the ingredients together in a bowl. After those 30 minutes are up, drain the salty water and gently squeeze out the excess water from the zucchini noodles. Pat dry with paper towels.

Once your zucchini noodles are dry, you can transfer them to an airtight container with the marinade, mix well, and keep them in the refrigerator for an hour or so. You can also let them marinate at room temperature for 30 minutes and then enjoy. Although it may not seem like it, these noodles are actually quite delicious when served cold. You can even keep them in an airtight container in the fridge for up to three days!

This recipe is just one of those recipes, folks. It is so refreshing, filling, and will make your raw vegan diet experience that much more exciting.   • 15% of the DV of folate

This is also served with crunchy romaine, butter lettuce, or cabbage leaves to enjoy as cups. It takes the classic side and turns it into a uniquely filling raw vegan entree. Plus, the almond tahini sauce makes it slightly different than your average recipe, which usually calls for olive oil and lemon juice. Commonly known as zoodles, zucchini noodles are a great low-carb pasta alternative that are easily digestible and friendly to your waistline. They are vibrantly green and curly beyond belief. One could say that they are a refreshing canvas for almost any pasta sauce. But we aren’t about to throw some processed, sodium-rich jarred sauce on these health bombs! These raw, nutrient-dense zucchini noodles call for a homemade arugula pesto!

The real talk star of the show is the raw vegan arugula pesto. This is not your average Italian grandmother’s pesto. No offense to all the nonnas out there, but we can’t be using the classic pesto recipe because it contains cheese. We hope this raw vegan, zesty, herbaceous, and peppery pesto is just as bold and flavorful as the classic pesto you know and love. Not only does arugula offer a peppery flavor, but it also provides lots of magnesium, potassium, iron, fiber, vitamin C, and vitamin K.

Now, pine nuts, especially raw pine nuts, can be a little pricey. If you do not have pine nuts, you can use raw cashews instead. The flavor will be slightly different, but not too much to really notice a vast difference. Add in the lemon zest and juice, garlic, sea salt, and rich olive oil and this pesto becomes exactly what you want it to be: delicious, luscious, and creamy. Toss the zoodles and slightly sweet and bright cherry tomatoes in the pesto to create a nutritionally dense raw entree that is full of flavor.

While you are using one of our many cleanses, you have to avoid certain foods, including rice paper wraps. Those rice paper wraps can be tricky to use, as they tend to stick to themselves or tear easily. Allow us to remove them from the equation and replace them with sturdy, raw collard greens for this recipe. Roll up the different vegetables as tight as you can and then dip the wraps in the highly addictive almond butter sauce. Not only are these wraps backed to the gills with nutrients, but they are also bursting with flavor. Trust us when we tell you that dipping sauce is life!

As a quick note, you can use rainbow chard or Swiss chard if you cannot find raw collard greens. If you prefer the taste of chard to collards, go with chard instead. Both greens serve as great wraps that hold up nicely with all of the ingredients inside. Additionally, if you want sauce in every bite and don’t want to dip the wraps, pour some of the dipping sauce on the ingredients in the wraps before rolling them up. Speaking of the filling ingredients, you can swap those out with others that you prefer. Do you prefer carrots instead of red bell peppers? Swap them out!

Once you have all of your ingredients prepped, make sure to lay them out on a work station so they are easily accessible when you roll up the greens. Additionally, remove the ends of the thicker stems from the greens, as those stems are fibrous and bitter. You can open the leaves and roll up the ingredients like a burrito, or you can fold the leaves in half, line up the ingredients, and roll them up that way. Roll as you please, but make sure that you do one thing: Enjoy the meal!

When we present you with a creative recipe, we try to keep it as simple as possible. The ingredient list may be long or short, but the preparation is meant to be easy. That is especially true for raw vegan recipes. A recipe should not scare you away! It should invite you to make it and inspire you to be more creative in the kitchen. That’s exactly what we though when we came up with this recipe.

All you really have to do for this recipe is soak the sunflower seeds and sun-dried tomatoes for a few hours. Blend them with the other ingredients to create the taco “meat,” and then roll up the nori wraps. Speaking of nori, make sure that you get the sheets that have not been roasted. You can usually find them at a number of grocery stores, especially health food stores. And another quick note about using the nori sheets: make sure to wet your finger and dab one end with it before you roll them up. That will help seal the roll.

These rolls differ from other raw vegan sushi rolls we’ve posted in the past. These have a raw vegan taco “meat” in the center. Roll that smoky, delicious, nutty concoction up with lettuce, bell peppers, avocado, and cilantro and you have a raw nori taquito. If you really want to go the extra mile, feel free to make your own pico de gallo or guacamole to put inside the rolls. That really just depends on the time you are willing to dedicate to this recipe. Whether you make those dips or not, these nori taquitos will have your tasted buds jumping for joy.

One serving of cajun seasoning (about 1/4 teaspoon) contains 130 to 170 milligrams of sodium, depending on the variety. Why put your body at risk when you can easily make your own with spices you probably have in your spice rack?

That was a lot of information, and we apologize, but it was necessary. The great thing about this pasta is that you only need one pot. You don’t need a separate pot for cooking the pasta, one for the sauce, and a colander to strain the pasta. Just. One. Pot. That is the beauty of a one pot pasta recipe! This dish is truly as easy to make as it is to devour. We cannot stress this point enough: the texture is so tantalizingly close to the real thing. You may even reconsider buying canned tuna after you make this! Even though it is completely plant-based, you don’t want to consume the entire bowl in one sitting. It’s be tempting, trust us, but sunflower seeds are calorically dense, offering about 165 calories per quarter cup. Even though they offer protein, vitamin E, selenium, folate, and zinc, too many won’t do any favors to your waistline.

The key to keeping this “tuna” salad textural is to not over-blend the sunflower seeds in the food processor. You want to pulse them with the lemon juice and olive oil to a point where they are combined, but not a paste. After a few pulses, taste the beginning of what will be your vegan “tuna” salad and check for texture. If it needs more blending time, give a few more pulses and taste for texture again.

Sometimes, the only thing that will hit the spot is a big plate of chili cheese fries. Unfortunately, that same plate will also cause serious digestive problems, such as bloating, gas, and possible constipation or diarrhea. We didn’t mean to gross you out from the start, but that is just the reality of scarfing down a big plate of chili cheese nachos. Fortunately, you don’t have to worry about that with this healthier vegan rendition.

This recipe comes together with a handful of pantry ingredients, many of which are rich in fiber, healthy fats, and protein. To accelerate the prep and cook time of this recipe, we opted to use a can of cooked lentils, instead of dried lentils. If you want to soak and then boil the lentils, you can go that route, but expect to add a couple extra hours to the total recipe time. With the canned lentils (try your best to get unsalted or low-sodium), you can drain and rinse them prior to adding them to the pot with the seasonings. Cook for five minutes and your chili portion of the recipe is ready.

For the best chili cheese fries, you need crispy fries. You can bake the fries in the oven, or you can cook them in an air fryer. Depending on the size of your air fryer, you may need to cook the fries in batches. Once they are nice and crispy on the outside, the fries are ready. While the fries are baking, you can make the cheese sauce, which is from another recipe, but it was so good that we used it again! Let us know how you like this vegan creation!
