The great thing about this salad is that it is a true salad for one. This salad will yield enough for you, and you alone. Make it as a filling lunch or as a side dish for your main course. Even if you dress the entire salad and don’t finish it, carrots are sturdy enough that the salad will still be good to enjoy the following day. It is crunchy, cool, creamy, a little spicy, and incredibly fragrant. The curry brings a unique element to the dressing that you don’t typically find in most dressings or sauces. There’s a warmth to the spice mixture, and yet it is also zesty.

Just so that we’re clear, there is a possibility that you might hate it or love it. The main takeaway is that you were brave enough to try it! Don’t ever stop trying new and exciting or exotic foods because you never know what your palate will enjoy. The great thing about this dressing is that it only requires five ingredients, or six if you count water. When choosing the tahini, make sure that it is raw, not roasted. The ideal tahini has a luxurious, silky consistency because it will not clump when you blend the dressing. When it comes to the curry powder, you ideally want to choose a salt-free blend. Depending on your curry powder, it may or may not have the addition of salt for added flavor. Your curry powder should only consist of a blend of several spices, but read the label because each brand may include or exclude certain ingredients.

The lemon juice works to cut the nuttiness from the tahini and enhance the overall tang of the dressing. Because curry powder is very aromatic and floral, the dressing requires acidity, which the lemon provides. Lastly, the garlic adds a little zing that complements the lemon. Now, if you enjoy a sweeter dressing, feel free to add a teaspoon or two of grade A maple syrup. Today, people associate the word “curry” with a dish that has a spiced sauce and meat or vegetables. You typically eat it with flatbread like naan, or you accompany it with rice. Classic curry dishes that may ring a bell are tikka masala, masoor dal, vindaloo, butter chicken curry, etc. For this curry, you don’t need an entire spice cabinet, nor do you need a long list of meat and veggies.

This is a tomato-based curry, using canned crushed tomatoes to establish a luxurious creaminess and slightly acidic flavor. You tame the acidity of the tomatoes with the coconut milk, which you can always add more of if you need it. Because this curry contains green peas, chickpeas, and spinach, you don’t have to worry about being hungry after a bowl. It has incredible depth of flavor that we know you are going to love. In the picture, you’ll notice that rice is in the bowl, and you can either enjoy the curry with or without rice. Please make the rice according to the right measurements.
