There is a delicate dance in place, a knowing that eating a couple is fine, eating the entire tray is problematic. The great thing about these raw brownies is that they they contain healthy fats, fiber, protein, and other nutrients that promote satiety. Because they are richer in calories, you do not want to eat a ton. For example, this recipe yields an 8″x8″ pan, which you cut into 16 pieces. Each brownie has about 150 calories, due to the pecans, almonds, dates, and sesame seeds. Just keep that in mind when you reach for a square.

In order to make brownies, you need chocolate, but not the type you are thinking of. There is not processed chocolate powder mix in this recipe! This recipe calls for 100% raw cacao powder, which you should not confuse with cocoa powder. Cacao powder has powerful nutritional benefits and no added sugars, which cocoa powder tends to contain. That is a general rule of thumb with raw vegan recipes that call for chocolate, though. Always opt for raw cacao powder!

In fact, you don’t even need an oven, flour, or dairy products to make this recipe!

To make the “batter” for this recipe, all you need to do is blend up the ingredients in a food processor. The food processor is an essential kitchen tool for a recipe such as this. This recipe calls for dates and nuts, so you need to blend them into a paste with the other ingredients. You don’t want big chunks of dates or walnuts, which is what could happen if you used a blender. Not to mention, the lack of liquid makes it hard to blend all of the ingredients in a blender. A food processor is a much better tool for the job. Anyways, that’s our food processor pitch!

After you blend the ingredients, you want to spread the mixture into an 8-inch by 8-inch pan lined with parchment paper. If you don’t put parchment paper down, cleaning the pan will be very difficult, and so will getting the brownies out of the pan. Make your life as easy as possible!

National Brownie Day is a day to indulge in one of America’s favorite baked goods. Cocoa starts out like cacao, but it is heated at high temperatures that yield different flavors and health benefits. Cacao contains powerful antioxidants, while the process of making cocoa alters the molecular composition of the beans, ultimately changing their chemical structure and decreasing the nutritional value.

A great comparison is raw fruits and vegetables to cooked fruits or vegetables. The heat kills the nutritional value and you don’t reap the full benefits of the raw versions. And the nutritional content may diminish depending on what you add to the cooked veggies, i.e. salt, butter, cheese, or other unhealthy ingredients.
