I am currently undergoing testing for sarcoidosis and found your site. I am already mostly vegan, but I read in your article that complex carbs should be greatly reduced or eliminated. I was just wondering what that might include, rice and oats? Should I be eating only fruits, veggies, beans and nuts?

That would include rice (only eat a little brown or wild rice), potatoes, yams, etc. Yes, eat more fruits, vegetables, nuts, etc.
