This zucchini pasta recipe is one for the ages. The garlic avocado sauce makes this meal creamy and delectable. It almost feels like you aren’t even eating a raw entree!

Ingredients
- 2 zucchinis, spiralized
- 1/2 avocadoÂ
- 2 peeled garlic cloves
- 1/2 onion
- sea salt & pepper, to taste
- 2 c homemade almond milk
- 1 handful raw cashews
- 1/4 c coconut aminos
- 1 handful basil leaves
- 1/4 c nutritional yeast
- 1/2 c cauliflower
- 1 tomato, diced
Instructions
- Place the noodles in a large bowl and set aside.
- Blend the rest of the other ingredients, except the tomato, in a food processor until smooth. Taste it and season as necessary. You may want to add some curry powder or another strong spice for a bolder flavor.
- Pour some of the sauce all over the noodles. Make sure to save some so that you can have extra when you serve the zoodles. Once you've coated the zoodles with the sauce, plate them and top with the diced tomatoes.
