One would think that it’s impossible to enjoy raw yams, but that theory is incorrect. Spiralizing a yam into thin noodles is one of the best ways to enjoy it in its raw form. It’s also possible to juice yams, or thinly slice them with a mandoline and dehydrate them to make chips. When you enjoy homemade yam noodles, you get to eat noodles that won’t make you feel bloated. Yams are excellent sources of complex carbohydrates and beta-carotene, and keeping them in their raw form means that you don’t lose out on those nutrients.
For this recipe, you’ll have to dedicate about 10 minutes to marinate/cook the mushrooms. You don’t really cook mushrooms; rather, you warm them up by putting them in the oven at the lowest setting. This helps to warm them up and impart more flavor.
When you spiralize your yam, make sure to use the fine noodle cut because you don’t want thick, fibrous yam noodles. Once you make the sauce, pour it over the noodles and allow them time to soak so that they can soften. This can take about 20 minutes. Finally, stir in the mushrooms and you have yourself a perfectly healthy dish!

Ingredients
For the Mushrooms
- 4 button mushrooms
- 1 tsp. sesame oil (optional but recommended)Â
- 1 tsp. tamari
For the Sweet Miso Sauce
- 2 tbsp. nutritional yeast
- 1 tbsp. agave syrup
- 1 tbsp. miso paste
- 1 tbsp. plain hummus
- 1 garlic clove, peeled and minced
- 2 tbsp. mustard
- 3 -5 tablespoons water, as needed
- 1 tbsp. sesame seeds
For the Yam Noodles
- 1 yam, peeled and spiralized
Instructions
For the Mushrooms
- Preheat your oven to its lowest setting (about 150º F).
- Slice the mushrooms really thin then rub in the oil and tamari. Add them to a heat-safe baking dish.
- Place the mushrooms in the oven and warm them up for about five minutes. Then remove them from the oven and set aside.
For the Sweet Miso Sauce
- Add all of the ingredients, except the sesame seeds, and blend until smooth.
- Once you have a smooth consistency, add in the sesame seeds and continue blending. Set aside.
For the Yam Noodles
- Place the spiralized yam noodles into a large bowl and then pour the miso sauce over them.
- Allow the noodles to sit in this sauce for about 20 minutes. Incorporate the marinated mushrooms and toss gently to combine.
- Serve and enjoy.
