Ingredients
- 4 c organic corn kernels, cooked and cooled
- 1 c red bell pepper, diced
- 1 c vine ripened tomato, finely diced
- 1/4 c red onion, diced
- 1/2 c blueberries
- 1 c fresh cilantro, chopped
- 1 tbsp. serrano chili, finely diced
- 2 garlic cloves, minced
- 2 tbsp. freshly squeezed lime juice
- 1 tbsp. extra virgin olive oil
- 1 tsp. sea salt, or more to taste
- freshly cracked black pepper, to taste
