Legend states that anyone who tries this dip falls in love with it. That’s true for anyone who enjoys food, not simply people who follow a raw vegan or vegan diet. It exhibits a velvety, luxurious texture that offers an intense cheesy flavor. On top of the inherent cheesiness, this dip brims with an array of spices that delight your palate. Simply dive in with pieces of raw vegetables or raw vegan dehydrated crackers and enjoy!
The first ingredient of note is cashews, which make up the base of the dip. In order to achieve the smoothest consistency possible, you have to soak the raw cashews in water for about one to two hours. After you drain the water, you can blend them with the other ingredients. Speaking of other standout ingredients, nutritional yeast is going to help you achieve that signature cheesy flavor you crave from queso dip. Not all nutritional yeast is created equal, though. Try your best to get nutritional yeast that is non-fortified. Although, some people argue that fortified nutritional yeast is a better option for vegans because it contains synthetic B12, but this comes down to personal preference.
You’ll notice that this dip contains a lot of spices, helping you achieve that signature cheesy flavor. If you want to increase the level of spice, add more cayenne pepper or chili powder. Essentially, the blend of spices aims to emulate a packet of taco seasoning, minus the excess sodium and preservatives. Cumin and turmeric actually pair beautifully and give you the signature queso color. Try it and let us know how you like it in the comments below.
