Lettuce wraps are a classic dish in Southeast Asia, but the filling is typically made from some type of minced meat. We decided to put a raw vegan spin on this dish and make the meat filling out of walnuts. The other vegetables in these wraps add refreshing crunch, and you can use your choice of filling ingredients, as long as they are cleanse approved.

Ingredients

For the Walnut Meat

  • 1 1/2 c raw walnuts
  • 1 c carrots, diced
  • 1 c celery, diced
  • 1/4 c scallions, chopped
  • 1/4 c fresh cilantro, chopped

For the Wraps

  • 8 romaine leaves
  • 1 c red cabbage, sliced
  • 1 c shredded carrots
  • 1 Persian cucumber, sliced into strips

Instructions

For the Walnut Meat

  1. Add all of the ingredients to a food processor and pulse until you get a consistency that is similar to minced meat. Scoop out of the processor and set aside in a bowl.

For the Wraps

  1. Lay out the lettuce leaves, the walnut meat, and the filling ingredients and begin assembling each wrap.
  2. Place a spoonful or two of the walnut meat in each leaf, followed by a little bit of cabbage, carrots, and cucumber.
  3. Roll up the leaves, serve, and enjoy.
