Ingredients
For the Salad
- 1/2 c raw pine nuts or walnuts (whatever is easier to get)
- 2 c spinach leaves
- 1 c fresh strawberries, quartered
- 1 avocado, peeled, pitted, and cubed
- 1/4 c red onion, chopped
For the Dressing
- 1/2 c extra virgin olive oil
- 1 tbsp. raw apple cider vinegar
- 1 tbsp. freshly squeezed orange juice
- 2 tbsp. water
- 3 ripe strawberries
- 3 fresh basil leaves
- 1/8 tsp. sea salt
Instructions
For the Salad
- Add all of the ingredients to a bowl and toss to combine. Set aside while you make the dressing.
For the Dressing
- Add all of the ingredients to a blender and pulse until you get a smooth consistency. Drizzle your desired amount over your salad and toss to coat all the ingredients in the dressing.
- Store leftover dressing in an airtight glass jar in the fridge for up to one week.
