Adding a little color to your salads is never a bad idea. In case you aren’t familiar with our “eat the rainbow” motto, you’re about to become well-acquainted. The more colorful produce items you eat, the more antioxidants you provide your body. That means more nourishment for your cells and a reduced risk of oxidative stress.
For this salad, the ingredients are quite simple, but the tropical flavors come to the forefront. The grapefruit offers a wonderful zest that complements the inherent sweetness of the mango. Spinach serves as the perfect base because it has a relatively neutral flavor. It goes great with most ingredients, especially the lime vinaigrette.
