Ingredients

For the Noodles

  • 2 sweet potatoes, peeled and spiralized
  • 1/2 medium onion, finely diced
  • 1/2 c cilantro, chopped

For the Sauce

  • 1/3 c coconut aminos
  • 2 tbsp. raw agave syrup
  • 2 tbsp. raw almond butter
  • 1 inch piece of ginger, peeled and diced
  • 1/2 tsp. garlic powder
  • 1/3 c raw cashews

Instructions

For the Sauce

  1. Add all of the ingredients to a blender and puree until smooth. Set aside while you prepare the sweet potato noodles.

For the Noodles

  1. Combine the noodles, onions, and cilantro in a large bowl and mix well. Drizzle your desired amount of sauce over the noodles and toss to coat the noodles in the sauce.
  2. Cover and let the noodles marinate for 30 minutes before serving. Enjoy!
