- 2 sweet potatoes, peeled and spiralized
- 1/2 medium onion, finely diced
- 1/2 c cilantro, chopped
For the Sauce
- 1/3 c coconut aminos
- 2 tbsp. raw agave syrup
- 2 tbsp. raw almond butter
- 1 inch piece of ginger, peeled and diced
- 1/2 tsp. garlic powder
- 1/3 c raw cashews
Instructions
For the Sauce
- Add all of the ingredients to a blender and puree until smooth. Set aside while you prepare the sweet potato noodles.
For the Noodles
- Combine the noodles, onions, and cilantro in a large bowl and mix well. Drizzle your desired amount of sauce over the noodles and toss to coat the noodles in the sauce.
