In the picture, you can see that the dip has a wonderfully creamy texture, similar to the texture of hummus. It should be thick and smooth, but you can make it more crumbly if you desire. Should you want a dip that has more texture, you don’t have to blend this dip until smooth. Once you achieve your desired texture, you can stop blending the ingredients in the food processor, scoop it out, and serve. You can also tweak the flavors to your personal preference, adding chopped green onion or garlic during the blending process.
Why should you soak the raw cashews? Although food processors have super blending abilities, they can still have a harder time when blending nuts. Soaking cashews helps to soften them, which makes them easier to blend. That means that you can achieve a smoother, creamier consistency without blending in the food processor for a long time. If you need to add more water during the blending process, feel free to do so.

Ingredients
- 1 c raw cashews (soaked in water for 2 hours and drained)
- 1/4 c filtered water (plus more as needed)
- 1 tbsp. jalapeño, finely diced
- 1 1/2 tsp. ginger, minced
- 1 tsp. freshly squeezed lemon juice
- 3/4 tsp. sea salt
- 2 tbsp. cilantro, finely chopped
Instructions
- Make sure to soak the cashews in water for at least two hours before you make the recipe. When ready to make the recipe, discard the soaking water.
- Add all of the ingredients, except the cilantro, to a food processor and pulse until you reach your desired consistency.
- If you want the dip to look like it does in the picture, continue blending until smooth. If you want a chunkier consistency, pulse until rustically combined.
- Spoon into a serving bowl and gently fold in the cilantro. You can also add diced green onion if you like.
- Serve with raw vegetable sticks or raw vegan dehydrated crackers.
