Ingredients
For the Dressing
- 1/2 c white onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp. extra virgin olive oil
- 2 tbsp. raw apple cider vinegar
- 1/4 tsp. ground cumin
- sea salt and pepper, to taste
For the Salad
- 1 lb carrots, peeled and grated
- 2 tbsp. cilantro, chopped
- 2 tbsp. flat leaf parsley, chopped
Instructions
For the Dressing
- Add all of the ingredients to a blender and blend until smooth. Taste and adjust seasonings as needed.
- Set aside while you make the salad.
For the Salad
- Add all of the ingredients to a large salad bowl and toss gently to combine.
- Drizzle your desired amount of dressing over the salad, toss to coat all of the ingredients, and then serve.
