Ingredients
For the Salad
- 1 c pomegranate seeds
- 1 bunch kale, chopped and thick stems removed
- 1 medium orange, sliced into segments
- 1/4 c raw walnuts, roughly chopped
For the Dressing
- 1/4 c extra virgin olive oil
- 2 tbsp. freshly squeezed lemon juice
- 2 tbsp. raw apple cider vinegar
- 1/2 tsp. ground mustard seed
- 1 clove garlic, minced
- 1/2 tsp. dried oregano
- 1/4 tsp. sea salt
- 1/8 tsp. ground black pepper
- 1 tsp. raw agave
Instructions
For the Salad
- Add all of the ingredients into a large salad bowl and toss to combine. Set aside while you make the dressing.
For the Dressing
- Pour all of the ingredients into a blender and blend until thoroughly combined. You can take a kale leaf and dip it into the blender to taste the dressing. Adjust seasoning if necessary.
- Drizzle your desired amount of dressing over the salad and toss to coat all of the ingredients. Any leftover dressing can be stored in a glass jar in the fridge for up to 5 days.
