The fall season brings many comforting flavors, including the versatile butternut squash. Although technically a winter squash, butternut is available most of the year because it keeps so long. These fries are a healthy alternative to regular potatoes, and it’s an out-of-the-box way to eat this squash. Don’t be afraid to add a few extra spices to flavor the squash how you want to eat it.

Ingredients
- 1 butternut squash
- 1 tbsp. olive oil
- 1 tsp. cinnamon
- sea salt and fresh parsley to garnish
Instructions
- Preheat the oven to 400 degrees. Peel and cut the squash in half lengthways. Scoop out the seeds and then cut each half into fries or wedges.
- Toss the fries in oil and then place in a single layer onto a baking tray. Bake for 20-35 minutes (depending on the size of your fries) turning once.
- Remove from the oven and sprinkle with cinnamon, sea salt, and fresh parsley.
