This raw walnut meat recipe differs from other raw “meat” recipes that we’ve posted before. When you take a bite of this “meat,” you’ll think that you just sautéed some Italian sausage. It can be stuffed into raw lasagna, tossed with zoodles in a pesto sauce, or mixed in with one of our many raw cheese sauces or dips. We hope you like it as much as we do!

Ingredients
- 1 c raw walnuts (soaked in cool water for 20 minutes and then drained)
- 2 tbsp. coconut aminos
- 1 tbsp. olive oil
- 2 1/2 tsp. fennel seeds
- 2 tsp. Italian seasoning
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. celery salt
- 1/2 tsp. smoked paprika
Instructions
- Add all of the ingredients to a food processor and pulse until everything is well combined. The texture should be crumbly, resembling cooked, ground meat.
- Spoon into a bowl and serve in raw wraps, with raw zoodles and sauce, or on raw pizza. Enjoy!
