What more do you need in a salad than Romaine lettuce and avocado? If the salad was just avocado, we’d be happy. Add the sweet shallots, crunchy pumpkin seeds, and smoky dressing and you’ve got yourself a great combination of flavors. You can eat this salad as a full meal or as a light snack in the afternoon.

Ingredients
For The Salad
- 1 Romaine heart
- 2 avocados
- 1 shallot, thinly sliced
- 3 tbsp. raw pumpkin seeds
For Smoky Dressing
- 1 clove garlic
- 1/2 tsp. smoked paprika
- 1 tbsp. agave
- 3 tbsp. apple cider vinegar
- 3 tbsp. olive oil
- a pinch of sea salt
Instructions
For the Salad
- On a platter arrange the romaine hearts.
- For the avocados, peel them, discard the pits and quarter them. Arrange the avocados on the lettuce and sprinkle the salad with the shallots and the raw pumpkin seeds.
For the Dressing
- Whisk all of the ingredients together in a small bowl and then drizzle it over the salad. Serve immediately.
