Ingredients
For the Curry
- 1/4 c raw cashews
- 1 c water
- 1 tsp. curry powder
- 1/4 c onion, diced
- Sea salt and pepper, to taste
For the Marinated Mushrooms & Onions
- 1 1/2 c thinly sliced mushrooms
- 1/4 c onion, diced
- 1 tsp. freshly squeezed lemon juice
- 1 tsp. coconut aminos
- 1/2 tsp. ground coriander
Instructions
For the Curry
- Blend all of the curry ingredients in a blender until you get a smooth consistency. Season to taste.
For the Marinated Mushrooms & Onions
- In a medium bowl, toss the mushrooms and onions in the lemon juice, coconut aminos, and ground coriander. Let that marinate at room temperature for about one hour.
- Pour your curry in a bowl and add the mushrooms and onions. If you want, you can add some spinach and fresh cilantro, but this is optional.
