Ingredients
For the Cauliflower Rice
- 1 head cauliflower stems removed, broken into florets
- 1 tbsp. nutritional yeast flakes
- 1 tsp. apple cider vinegar
- 1 tsp. coconut aminos (optional)
For the Sushi
- 4 sheets of nori
- 1 red bell pepper, thinly sliced
- 1 avocado peeled and sliced
- 2 c red cabbage, thinly sliced
- 1 -2 green onions, thinly sliced lengthwise
- 1 c red leaf lettuce, thinly sliced
For the Dipping Sauce
- 1/4 c raw almond butter
- 1 1/2 tsp. agave nectar
- 1 1/2 tsp. coconut aminos
- pinch of cayenne pepper
Instructions
For the Cauliflower Rice
- Combine all of the ingredients in a blender or food processor and pulse until you get a rice-like consistency. Spoon the cauliflower rice into a bowl and set aside.
For the Sushi
- Lay one sheet of nori on a bamboo sushi mat if you have one. If you don't have one, that\'s perfectly fine; just place it on a flat surface.
- Press a thin layer of cauliflower rice over the entire nori sheet. Leave a little strip of nori at the end farthest from you. You will later wet this with a little water to help it adhere to the roll.
- On the side closest to you, place a few slices of bell pepper, avocado, shredded cabbage, and lettuce. Wet that little strip of nori with a little water and roll the sushi up. Slice the roll into your desired sizes and then repeat for three more rolls.
For the Dipping Sauce
- Add all of the ingredients to a blender and pulse until you get a smooth consistency. You can also add the ingredients to a bowl and whisk to combine.
- Pour the sauce into a little bowl and dip your sushi into the sauce when you are ready to eat the rolls.
