Ingredients

For the Cauliflower Rice

  • 1 head cauliflower stems removed, broken into florets
  • 1 tbsp. nutritional yeast flakes
  • 1 tsp. apple cider vinegar
  • 1 tsp. coconut aminos (optional)

For the Sushi

  • 4 sheets of nori
  • 1 red bell pepper, thinly sliced
  • 1 avocado peeled and sliced
  • 2 c red cabbage, thinly sliced
  • 1 -2 green onions, thinly sliced lengthwise
  • 1 c red leaf lettuce, thinly sliced

For the Dipping Sauce

  • 1/4 c raw almond butter
  • 1 1/2 tsp. agave nectar
  • 1 1/2 tsp. coconut aminos
  • pinch of cayenne pepper

Instructions

For the Cauliflower Rice

  1. Combine all of the ingredients in a blender or food processor and pulse until you get a rice-like consistency. Spoon the cauliflower rice into a bowl and set aside.

For the Sushi

  1. Lay one sheet of nori on a bamboo sushi mat if you have one. If you don't have one, that\'s perfectly fine; just place it on a flat surface.
  2. Press a thin layer of cauliflower rice over the entire nori sheet. Leave a little strip of nori at the end farthest from you. You will later wet this with a little water to help it adhere to the roll.
  3. On the side closest to you, place a few slices of bell pepper, avocado, shredded cabbage, and lettuce. Wet that little strip of nori with a little water and roll the sushi up. Slice the roll into your desired sizes and then repeat for three more rolls.

For the Dipping Sauce

  1. Add all of the ingredients to a blender and pulse until you get a smooth consistency. You can also add the ingredients to a bowl and whisk to combine.
  2. Pour the sauce into a little bowl and dip your sushi into the sauce when you are ready to eat the rolls.
