Ingredients
- 4 Persian cucumbers, chopped
- 2 Roma tomatoes, diced
- 1/2 small red onion, diced
- 1 1/2 tbsp. parsley, chopped
- 1 1/2 tbsp. mint, chopped
- juice of 1 lemon
- 1 tsp. extra virgin olive oil
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- Add the cucumber, tomato, onion, mint, parsley, and mint to a medium-sized mixing bowl and toss to combine.
- Squeeze the lemon juice, drizzle the olive oil, and sprinkle the sea salt and pepper over the salad. Mix well to ensure that all the ingredients are dressed. Serve and enjoy!
