Ingredients
For the Salad
- 1 bunch kale, thick stems removed and chopped
- 1 c cucumber, chopped
- 1 medium avocado, pitted and diced
- 1/2 c sweet onion, diced
For the Dressing
- 3 tbsp. freshly squeezed lemon juice
- 1/4 tsp. lemon zest
- 2 tbsp. raw tahini
- 2 tbsp. grade A maple syrup
- 2 tsp. extra-virgin olive oil
- 2 pinches cayenne pepper
- pinch of sea salt
- 2 pinches freshly ground black pepper
Instructions
For the Salad
- After chopping the kale, rinse it and massage it so that you can soften it up.
- Add the chopped to a large salad bowl and pour in the cucumber, avocado, and onion. Set aside while you make the dressing.
For the Dressing
- Add all of the ingredients to a small bowl and whisk until smooth.
- Dress the salad in your desired amount of dressing and toss to coat all of the ingredients. Enjoy!
