Some say that chocolate lava cake is overrated and an outdated dessert. Let’s see if you feel that way after making this delectable, healthier rendition that you can enjoy guilt-free. Add goji berries or fresh raspberries on top to add a tart element to balance out the sweetness of the dessert.

Ingredients
For the Cake
- 1/3 c steel cut oats
- 1/3 c walnuts
- 1/4 c raw cacao powder
- 1/3 c dates, pitted and roughly chopped
- 1/3 c raisins
For the Molten Lava
- 1/3 c cacao butter, melted
- 1/3 c grade A maple syrup
- 1/3 c raw cacao
- 1/3 c dates, pitted and roughly chopped
- 1/4 tsp. each of cinnamon, Himalayan salt, and chili powder
- organic unsweetened almond milk, as needed
Instructions
For the Cake
- Pulse the oats, walnuts and cacao powder in your food processor until they become a rough flour. Add the dates and raisins and process until it all starts to stick together.
- Grease cupcake tins with a small amount of coconut oil. Using about 2/3 of the mix (you have to save some for the tops), press a small amount into the bottom and sides of cupcake tins and put in the fridge. Use the rest of the mix to make the tops by pressing it into cookie molds the same diameter of your cupcake tins. Put those in the fridge as well.
For the Molten Lava
- Add all of the ingredients to a blender and blend until smooth, adding the almond milk as needed to yield a "molten" consistency.
- Remove the cakes from the cupcake molds and pour the molten mixture into each one, filling up almost to the top. Carefully press the tops onto the cakes, making sure to connect the edges.
- Flip over and decorate with cacao powder and goji berries. Enjoy!
