Ingredients
For the Salad
- 1 lb Brussels sprouts, trimmed & thinly sliced
- 1/2 c dried cranberries (without sulfur)
- 2 tbsp. raw pumpkin seeds
- 1/4 c raw pecans, chopped
For the Dressing
- 1 avocado, mashed
- 3 tbsp. extra-virgin olive oil
- 2 tbsp. grade B maple syrup
- 1/2 tsp. ground mustard seed
- zest of 1 lemon
- 1 1/2 tbsp. fresh lemon juice
- 1/4 tsp. sea salt
- Freshly ground black pepper, to taste
Instructions
- Whisk together in a small mixing bowl the mashed avocado, maple syrup, lemon zest, lemon juice and mustard while gradually adding the olive oil, whisking to emulsify. Toss the dressing with the Brussels sprout leaves and
