Did you stuff yourself with a little too much food over the holidays? Do you feel like you’re ready to burst if you don’t detox all of that food immediately? All of that dense, heavy holiday food can really clog your eliminative channels, leading to poor circulation or sluggish digestion.

This salad is going to put you on the path to fix all of those things. The nutrients in this salad help to open up detoxification pathways, improving your body’s ability to eliminate toxins. Plus, it taste delicious and the fresh herbs give it a wonderful fragrance. Additionally, the varying textures make this salad a pleasant eating experience.

Ingredients

For the Dressing

  • 6 tbsp. extra virgin olive oil
  • 4 tbsp. freshly squeezed lime juice
  • 2 tbsp. filtered water
  • 1 tbsp. raw almond butter
  • 1 garlic clove, minced
  • 1/2 -inch piece fresh ginger, minced
  • 1/2 tsp. sea salt

For the Salad

  • 4 c green cabbage, thinly sliced
  • 4 c red cabbage, thinly sliced
  • 4 c kale, thinly sliced and thick stems removed
  • 2 c shredded carrots
  • 1/2 c parsley, chopped
  • 1/2 c cilantro, chopped
  • arils from 1 small pomegranate
  • 1/2 c raw pumpkin seeds (optional)

Instructions

For the Dressing

  1. Add all of the ingredients to a blender and blend until smooth.
  2. Taste the dressing and adjust seasonings if you need to. Set aside and make the salad.

For the Salad

  1. Add all of the ingredients to a large salad bowl and gently toss to mix together.
  2. Pour the dressing over the salad and mix to ensure all the ingredients are coated in dressing. Serve and enjoy.
