Ingredients
For the Dressing
- 6 tbsp. extra virgin olive oil
- 4 tbsp. freshly squeezed lime juice
- 2 tbsp. filtered water
- 1 tbsp. raw almond butter
- 1 garlic clove, minced
- 1/2 -inch piece fresh ginger, minced
- 1/2 tsp. sea salt
For the Salad
- 4 c green cabbage, thinly sliced
- 4 c red cabbage, thinly sliced
- 4 c kale, thinly sliced and thick stems removed
- 2 c shredded carrots
- 1/2 c parsley, chopped
- 1/2 c cilantro, chopped
- arils from 1 small pomegranate
- 1/2 c raw pumpkin seeds (optional)
Instructions
For the Dressing
- Add all of the ingredients to a blender and blend until smooth.
- Taste the dressing and adjust seasonings if you need to. Set aside and make the salad.
For the Salad
- Add all of the ingredients to a large salad bowl and gently toss to mix together.
- Pour the dressing over the salad and mix to ensure all the ingredients are coated in dressing. Serve and enjoy.
