Focusing on imparting flavor to the core ingredients that make up a dish is your number one priority. For this recipe, that means concocting the perfect combination of spices.

You’ll want to make the taco seasoning before you decide to make this entree. The reason for that is to help you save you time every when you’re hungry. This fajita recipe contains the classic bell pepper and onion combination, and the thicker portobello slices have a similar texture to sautéed meat. They are filling and loaded with beneficial nutrients, so eat up!

Ingredients

For the Taco Seasoning

  • 1 tbsp. chili powder
  • 1 1/2 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1/2 tsp. sea salt
  • 1/4 tsp. cayenne pepper

For the Fajitas

  • 2 portobello mushrooms
  • 2 bell peppers, thinly sliced (any color)
  • 1 onion, thinly sliced
  • 1 tbsp. taco seasoning (recipe above)
  • Juice of 1/2 lime
  • 1 tbsp. olive oil
  • 6 corn tortillas

Optional Toppings

  • 1 avocado, peeled and thinly sliced
  • 1 c tomato, diced
  • 1/4 c cilantro, chopped

Instructions

For the Taco Seasoning

  1. Add all of the ingredients to a small bowl and mix well.
  2. Pour the spice mixture into a jar, screw on the lid, and give it a good shake. You can use it whenever you are ready.

For the Fajitas

  1. Rinse the mushrooms, remove the stems, and spoon out the gills. Cut eat portobello into approximately 1/3-inch slices.
  2. Add the olive oil to a large pan over medium heat. Add the sliced peppers and onions to the pan and cook for 2 minutes.
  3. Add the sliced mushrooms to the pan and season the veggies with a tablespoon of taco seasoning and continue to cook for another 7 minutes, stirring occasionally.
  4. In the last minute of cooking, squeeze the juice of half a lime into the pan. Cook for an additional minute and then remove from heat.
  5. Let the veggies cool and prepare your tortillas. You can warm them in a tortilla oven in the microwave, or you can warm them in a pan.
  6. Spoon the fajita mixture into the center of the tortillas and top with your desired toppings. Enjoy!
