This recipe isn’t an everyday occasion during your raw vegan journey. Think of this as an elaborate raw vegan brunch item. First, you have to carefully craft the coconut yogurt. Allow that to set in the fridge for a couple hours. Then you get to assemble the breakfast boats, which are completely customizable, as long as the toppings are 100% cleanse-approved.

When you go out to purchase a papaya, make sure to get one that is ripe, but not too ripe. If you have them available at your grocery store, purchase a Hawaiian papaya. They are much sweeter and have better flavor than the larger papayas that come from Mexico. Ultimately, it doesn’t matter what papaya you get because they are all beneficial for digestive health and immune function. According to many studies, the digestive enzymes in papayas work to move food through the digestive tract. Additionally, the antioxidants in papayas may help reduce inflammation and cholesterol levels.

Ingredients

For the Coconut Yogurt

  • 2 c fresh young Thai coconut meat
  • 1/2 c fresh coconut water from Thai coconuts
  • 1 tsp. freshly squeezed lemon juice
  • 1 tbsp. raw agave nectar
  • pinch of sea salt

For the Papaya Boats

  • 1 ripe papaya
  • 1/2 c blueberries
  • 1/2 c raspberries (or cranberries)
  • 1 tsp. chia seeds (optional)
  • 2 tbsp. goji berries (optional)
  • 1/2 c strawberries (optional)

Instructions

For the Coconut Yogurt

  1. Add all of the ingredients to a food processor or high-speed blender and blend until smooth. You may need to stop blending, scrape down the sides midway through blending, and continue blending to ensure that everything is incorporated.
  2. Spoon the blended mixture into an airtight container and refrigerate for at least two hours.

For the Papaya Boats

  1. Cut the papaya in half lengthwise and scoop out the black seeds.
  2. Remove the coconut yogurt from the fridge and fill each half of the papaya with yogurt.
  3. Beautifully arrange your blueberries, raspberries, chia seeds, goji berries, and strawberries on top of the yogurt, creating a wonderfully appetizing breakfast bowl.
  4. All of these toppings can be exchanged for raw vegan toppings that you prefer, of course.
