Ingredients
For the Salad
- 1 small head of lettuce of your choice chopped
- 1 large nectarine pitted and sliced
- 1/2 large avocado pitted, peeled, and sliced
- 1/2 medium English cucumber choped
- 2 tbsp. raw pumpkin seeds
- 1/4 c fresh blueberries
For the Dressing
- 1/4 c raw apple cider vinegar
- 3 tbsp. raw agave
- 1/2 tsp. ground mustard seed
- 1 1/2 tsp. freshly squeezed lime juice
- 1/2 tsp. freshly ground pepper
- 1/2 tsp. sea salt
- 3/4 tsp. smoked paprika
- 1 clove garlic minced
- 1 tbsp. shallot minced
- 1/4 c extra virgin olive oil
Instructions
For the Salad
- Combine all of the salad ingredients in a large bowl and mix well. Set aside while you make the dressing.
For the Dressing
- Add all of the ingredients, except for the olive oil, to a blender and blend until you get a smooth consistency. Slowly drizzle in the olive oil during the blending process.
- Pour the dressing over the salad immediately, mix well, and then serve.
