People who enjoy spicy food often cook accordingly so that others don’t wine about spice. You shouldn’t have to change your cooking because you have a high heat tolerance. Make this recipe to enjoy by yourself, or with another person who appreciates spicier foods. The salad dressing won’t make  you sweat, but you’ll taste that chipotle!

Ingredients

For the Salad

  • 2 c cherry tomatoes, quartered
  • 2 medium avocados, diced
  • 1/2 orange bell pepper, diced
  • 1/2 c scallions, thinly sliced
  • 6 c spring mixed greens
  • 1/4 c cilantro, roughly chopped

For the Dressing

  • 1/2 c raw cashews (soaked in water for 2 hours then drained)
  • 1/2 c water
  • 2 tbsp. freshly squeezed lime juice
  • 1 clove garlic, minced
  • 3 tbsp. nutritional yeast
  • 1/4 tsp. ground chipotle
  • 1/4 tsp. smoked paprika
  • pinch of sea salt
  • pinch of black pepper

Instructions

For the Salad

  1. Add all of the ingredients to a large salad bowl and toss well to combine. Set aside while you prepare the dressing.

For the Dressing

  1. Add all of the ingredients to a blender and blend until smooth. Taste and adjust seasonings as needed.
  2. Drizzle your desired amount of dressing over the salad ingredients and toss to ensure all the ingredients are coated. Serve and enjoy.
