Ingredients
For the Salad
- 2 c cherry tomatoes, quartered
- 2 medium avocados, diced
- 1/2 orange bell pepper, diced
- 1/2 c scallions, thinly sliced
- 6 c spring mixed greens
- 1/4 c cilantro, roughly chopped
For the Dressing
- 1/2 c raw cashews (soaked in water for 2 hours then drained)
- 1/2 c water
- 2 tbsp. freshly squeezed lime juice
- 1 clove garlic, minced
- 3 tbsp. nutritional yeast
- 1/4 tsp. ground chipotle
- 1/4 tsp. smoked paprika
- pinch of sea salt
- pinch of black pepper
Instructions
For the Salad
- Add all of the ingredients to a large salad bowl and toss well to combine. Set aside while you prepare the dressing.
For the Dressing
- Add all of the ingredients to a blender and blend until smooth. Taste and adjust seasonings as needed.
- Drizzle your desired amount of dressing over the salad ingredients and toss to ensure all the ingredients are coated. Serve and enjoy.
