You have to use those berries quickly, so this salad is a great way to enjoy them all before they go bad. Plus, the fresh, sweet berries are a pleasant relief to the intense raw onion flavor. If you prefer shallots to raw red onion in your salad, you can thinly slice one shallot in place of the red onion. Thinly slicing the red onion or shallot will help mellow the intensity.

Ingredients
For the Salad
- 6 c spinach
- 1/3 c red onion, thinly sliced*
- 1 c raspberries
- 1 c blueberries
- 1 c cherry tomatoes, halved
- 1/3 c raw pistachios, chopped
- 2 tbsp. raw sunflower seeds
For the Dressing
- 3 tbsp. grade A maple syrup
- 2 tbsp. raw apple cider vinegar
- 1 tbsp. olive oil
- 1/4 tsp. mustard powder
- pinch of sea salt
- pinch of black pepper
Instructions
For the Salad
- Add all of the ingredients to a large salad bowl and toss gently to combine. You don\'t want to over-toss because that can cause the berries to smush.
- If you want to wait to mix the salad until you pour the dressing on it, then you can do that as well.
- Set the salad aside while you prepare the dressing.
For the Dressing
- Add all of the ingredients to a mason jar, screw on the lid, and shake vigorously to combine. Taste and adjust the seasonings as needed.
- Pour the dressing over the salad and toss to coat all of the ingredients. Serve immediately and enjoy.
