Ingredients
- 1/2 watermelon
- 1/2 honeydew
- 1/2 cantaloupe
- 1/2 c blueberries
- 8 -10 mint leaves
- juice of 1 lemon
- 1/2 tsp. sea salt
- 1/4 tsp. curry powder
Instructions
- For this recipe, you are going to need a melon baller. The trick to using it successfully is to press it down straight into the melon and turn it over to make the balls.
- Make balls from all the melons and place them in a large salad bowl. Add the blueberries to the bowl and then make your dressing.
- Whisk the chopped mint leaves, lemon juice, sea salt, and curry powder together and drizzle it over the salad when you are ready to serve.
