Ingredients

  • 2 sweet potatoes
  • 2 tbsp. vegan butter
  • sea salt, to taste
  • black pepper, to taste
  • 1/4 c walnuts

Instructions

  1. Bring a pot of salted water to a boil.
  2. While the water is boiling, peel and cube the sweet potatoes. Add them to the boiling water and simmer until fork-tender (about 10-15 minutes).
  3. Drain the water and keep the sweet potatoes in the pot. Place the pot back over medium-low heat and add the vegan butter, sea salt, and pepper. Mash until you achieve your desired consistency.
  4. Transfer the mashed sweet potatoes to a bowl and top with walnuts. Serve and enjoy.
