How do you keep your taste buds interested in salads? The simple answer is that you have to change up the salad ingredients and the dressing. Now, there are salads that you can enjoy over and over again without boring your taste buds. The same statement applies for dressings, especially if they hit sweet, acidic, and slightly tart notes. We feel that the dressing for this salad is wonderfully zesty and sweet, complementing the tropical mango and nutty cashews.
The salad base is baby spinach, which is just young spinach that farmers harvest during the early stages of growth. Generally speaking, farmers harvest the leaves between 15-35 days after planting. According to food experts, baby spinach exhibits a sweeter flavor profile than mature spinach, making this green more enjoyable for those who opposed bitter greens. Don’t worry, baby spinach is far different in flavor from chard, turnip greens, or arugula.
Our main goal with this salad was to make it enjoyable for summer. That means that it had to be refreshing, so incorporating mangos and a citrus dressing was paramount. You’ll notice that both the salad and the dressing only have a select number of ingredients as well. All that means is that we are showcasing the natural flavors of the ingredients!

Ingredients
For the Salad
- 2 c fresh baby spinach
- 1 mango, peeled and cubed
- 1/4 c raw cashews, roughly chopped
For the Dressing
- 2 tbsp. olive oil
- 2 limes, juiced
- 2 tbsp. raw agave nectar
- sea salt and fresh ground pepper, to taste
Instructions
For the Salad
- Combine all of the ingredients in a large salad bowl and toss gently to combine.
- Set aside while you prepare the dressing.
For the Dressing
- In a small bowl, whisk together all of the ingredients until thoroughly combined. Taste and adjust seasonings as needed.
- Pour the dressing over the salad and toss to coat all of the ingredients. Serve and enjoy.
