Just make sure that you get rid of that stiff, fibrous stem as best you can, or else your taste buds will be in for a bitter, chewy surprise. Think of those big, leafy collards as nature’s tortillas, only they are sodium-free and pack a serious nutritional punch. Not only that, you get to pack them with a colorful mix of crunchy veggies, for example, some shredded carrots, bell peppers, alfalfa sprouts, avocado, and some deliciously sweet mango. Each bite is better than the last!
The excitement doesn’t just end with these wraps. In fact, you could argue that these wraps are nothing without the silky, slightly sweet and salty almond butter dipping sauce. It is absolutely to die for! Think of this sauce like a raw vegan alternative to a classic peanut sauce. It is nutty, creamy, and has just the write amount of sweetness to complement the ingredients inside the wraps. You can pour some sauce over the ingredients before you roll them up inside the collard leaves, or you can serve it on the side and dip as you go. Ingredients
For the Dipping Sauce
- 1/2 c water
- 1/2 c raw almond butter
- 1/4 c coconut aminos
- 2 cloves garlic, peeled
- 1 -inch nob fresh ginger, peeled and grated
- 1 tsp. tahini
- 3 tbsp. freshly squeezed lime juice
- 1/2 tsp. grade A maple syrup
For the Collard Wraps
- 1 bunch collard greens, rinsed and thick stems removed
- 2 c carrots, shredded
- 1 c alfalfa sprouts
- 1 avocado, peeled, pitted and sliced
- 1 mango, peeled and cut into strips
- 1/2 bunch cilantro, rinsed and chopped
Instructions
For the Dipping Sauce
- Add all of the ingredients to a blender and blend until smooth. Taste and adjust seasonings or ingredients to your liking.
- Pour the sauce into a small bowl and set aside while you make the wraps.
For the Collard Wraps
- Trim the collards so that they do not have thick stems anymore.
- Arrange your ingredients in a line on each collard leaf before rolling it up. Feel free to drizzle some sauce inside the wrap if you want.
- Serve with dipping sauce and enjoy!
