This salad will make you become a fan of kale. The slight bitterness of kale goes great with the creamy avocado and crispy, sweet pear. And the apple cider vinaigrette ties everything together, so you can’t go wrong. We added some ground mustard seed to the dressing for added depth of flavor.
Kale is a great salad base, but people tend to avoid it because it has a very fibrous texture and distinct taste. The key to tenderizing kale is to first massage it when you rinse it. You also have to remove any thick stems because they are bitter and chewy. You’ll feel like a goat chomping on grass if you include them in your salad. Lastly, you need to finely chop the kale for it to be fully tenderized and appetizing.

Ingredients
For the Salad
- 6 c kale, rinsed and chopped
- 2 pears, cored, and cubed
- 1 avocado, peeled, pitted, and cubed
- 1/2 c pine nuts
For the Dressing
- 1/4 c olive oil
- 1/2 tsp. ground mustard seed
- 1 tsp. freshly squeezed lemon juice
- 1 tbsp. raw agave syrup
- 2 tsp. raw apple cider vinegar
- sea salt and pepper, to taste
Instructions
For the Salad
- In a large salad bowl, combine the chopped kale, pears, avocados, and pine nuts.
- Set aside while you make the dressing.
For the Dressing
- Add all of the ingredients to a small bowl and whisk until smooth.
- Pour the dressing over the salad and toss to ensure that all the ingredients are coated.
- Serve in two separate bowls and enjoy.
