If you are cleansing and want to celebrate Halloween without breaking your diet, get creative and festive with these jack-o-lantern bell peppers. Stuff them with your favorite veggies sticks and enjoy the raw vegan ranch dip. When the jack o’lanterns are empty, slice them up and dip them in the “ranch” too!

Ingredients
For the Jack-O-Lanterns
- 3 orange bell peppers
- 1 c broccoli florets
- 2 c carrot sticks
- 2 c celery sticks
For the Raw Ranch Dressing
- 1/2 c cashews (soaked 2 to 4 hours, drained and rinsed)
- 1 tbsp. freshly squeezed lemon juice
- 1/2 c homemade almond milk
- 1/2 tsp. sea salt
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 1 tbsp. dried parsley
- 1 tbsp. fresh or dried chives
Instructions
For the Jack-O-Lanterns
- Cut the tops off the bell peppers and cut around the insides to remove the seeds.
- With a sharp paring knife, score your jack-o-lantern faces on the bell peppers. Then cut all the way through to cut the pieces out.
- Fill one with broccoli, one with carrot sticks, and one with celery sticks.
For the Ranch Dressing
- Add all of the ingredients to a high-speed blender or food processor and blend until you get a smooth and creamy consistency.
- Pour the mixture into a bowl, place next to the jack-o-lanterns, and enjoy dipping!
