Just when you thought watermelon couldn’t get any better, it did with this refreshing sorbet. If you’d rather have more of a slushie, you can use a little more water. A thicker sorbet will come from using less water and more ice. If you’re feeling a little experimental, add in a few mint leaves!

Ingredients

  • 2 c fresh watermelon chunks, frozen overnight
  • 1 c raw coconut water (no added sweeteners or preservatives)
  • a few peppermint leaves (optional)

Instructions

  1. Combine watermelon and coconut water into a blender, and blend until smooth. You can add more or less coconut water or watermelon, depending on how you like the consistency of your sorbet.
  2. Serve and enjoy!
