Two things we love in this world are almonds and dates. We love many things, but these two food ingredients are versatile, delicious, filling, and loaded with essential vitamins and minerals. Dates provide a natural sweetness that balances the nutty, slightly bitter flavor of raw almonds. Add the creamy raw almond butter into the equation and you have a recipe for some of the best raw vegan energy bars you can imagine.

Full of protein, fiber, and healthy fats, these homemade almond butter bars are about to become your favorite go-to snack. While there are many reasons to love almonds, especially in regards to their flavor, we appreciate their health properties. Many health studies confirmed that almonds have the ability to boost brain health, regulate cholesterol levels and blood sugar, reduce inflammation, promote heart health, and more. Because of their antioxidant content, almonds may enhance skin complexion and fight free radicals. Most importantly, they provide you sustained energy. And who doesn’t need more energy? Well, maybe not your children, but adults can always use a little boost, especially to avoid energy drinks between meals. Homemade Almond Butter Bars

Ingredients

  • 1 c dates, pitted and roughly chopped
  • 1 c raw almonds
  • 2 tbsp. raw almond butter
  • 1/8 tsp. sea salt
  • 1 tbsp. warm water

Instructions

  1. Combine the dates and almonds in a food processor and blend until finely chopped.
  2. Add the almond butter, sea salt, and warm water and pulse until a dough-like ball starts to form. You may need to stop blending, scrape down the sides, and continue blending to fully blend all the ingredients.
  3. Line an eight-inch by eight-inch baking pan with parchment paper and press the blended mixture into the pan. Press it down until it is about a half-inch thick.
  4. Place the pan in the freezer for about one hour to harden. Remove from the freezer and cut into eight bars. Enjoy when ready, storing the rest of the bars in an airtight container in the fridge for up to two weeks.
