Ingredients
For the Dressing
- 1/2 c olive oil
- 1/3 c raw apple cider vinegar
- 1 lemon, juiced
- 2 tbsp. raw agave nectar
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
For the Salad
- 12 oz kale, thick stems removed and chopped
- 2 Honeycrisp apples, cored and thinly sliced
- 1 c raw pecan halves
- 3/4 c pomegranate arils
Instructions
For the Dressing
- Add all of the ingredients to a jar, screw on the lid, and shake vigorously to combine. Alternatively, add all of the ingredients to a bowl and whisk to combine.
- Taste and adjust seasonings as needed. Set the dressing aside while you prepare the salad.
For the Salad
- Make sure that you remove the fibrous stems from the kale leaves before you chop up the kale.
- Add the chopped kale, sliced apples, raw pecans, and pomegranate arils to a large bowl and toss gently to combine.
- Drizzle the dressing over the salad and toss to coat all of the ingredients. Serve and enjoy.
