Ingredients
- 1 large zucchini
- 2 tbsp. olive oil
- Sea salt, to taste
Instructions
- Preheat your oven to 225 degrees Fahrenheit and line two baking sheets with silicone baking mats. You don't have to use these if you want to use a baking sheet, but the mats make taking the chips off very easy.
- Thinly slice your zucchini on a mandolin and place them between paper towels and press down. This helps draw out the moisture, which makes them cook faster.
- Evenly spread the zucchini slices on the baking sheets, drizzle with olive oil, and season with sea salt. Don\'t over-season your chips. It's better to under-season and then add more once they are done cooking.
- Bake for about 2 hours and then remove. Let the chips cool before eating. Store in an airtight container for up to 3 days.
