Ingredients
For the Salad
- 2 carrots, shredded
- 1 c Thompson raisins (no preservatives or added sugars)
- 1/4 c raw pumpkin seeds
For the Dressing
- 1/3 c tahini
- 1 1/2 tbsp. curry powder
- 1/4 c freshly squeezed lemon juice
- 2 tbsp. grade A maple syrup
- 1/4 tsp. black pepper
Instructions
For the Salad
- Combine the carrots, raisins, and pumpkin seeds in a medium-size mixing bowl and toss gently to combine.
- Set the salad aside while you prepare the dressing.
For the Dressing
- In a small bowl, add all of the ingredients and whisk to combine.
- Drizzle your desired amount of dressing on the salad and toss to coat the ingredients. Serve and enjoy.
