Ingredients
For the Dressing
- 2 tbsp. freshly squeezed lemon juice
- 2 tbsp. olive oil
- 1 tbsp. raw apple cider vinegar
- 2 tsp. Herbs de Provence
- 1/2 tsp. mustard powder
- sea salt and freshly ground black pepper, to taste
For the Salad
- 1 tbsp. chopped Italian parsley
- 1 large avocado, peeled, pitted, and cubed
- 4 c broccoli florets
- 1 c spring mixed greens
- 1 c cherry tomatoes, halved
- 1/2 c blueberries
- 2 tbsp. hemp hearts
Instructions
For the Dressing
- In a small bowl, combine the ingredients and whisk well until fully mixed. Taste and adjust seasonings as needed.
- Set the dressing aside while you prepare the salad.
For the Salad
- Add all of the ingredients to a large bowl and toss gently to combine.
- Pour the dressing over the salad and toss to ensure all the ingredients are coated. Serve and enjoy.
