This salad is filled with protein, vitamin K, vitamin A, chlorophyll, and a variety of phytonutrients and antioxidants, which come from the multi-colored vegetables. We continue to stress the importance of “eating the rainbow,” in order to diversify flavors and obtain an array of nutrients. The refreshing citrus dressing is perfect for these hot days in the end of summer, so get it while it’s hot! We are of course referring to the weather and not warming up the salad, obviously. Ingredients
For the Salad
- 2 c broccoli, finely chopped
- 2 c purple cabbage, finely chopped
- 2 c Brussels sprouts, finely chopped
- 2 c shredded carrots
- 3 c kale, finely chopped
- 1 c green onion, chopped
- 1 c blueberries
- 1 c raw almonds, chopped
For the Dressing
- 3 tbsp. olive oil
- 1/3 c freshly squeezed lemon juice
- 1 tsp. fresh ginger, peeled and grated
- 2 tsp. raw agave syrup
- 1 tsp. ground mustard seed
- pinch of sea salt
- pinch of black pepper
Instructions
- Combine all of the salad ingredients in a large salad bowl and mix to combine.
- Whisk the dressing ingredients together in a small bowl and then drizzle your desired amount over the salad.
- Serve in bowls and enjoy.
