Every bite of this cucumber noodle salad is an explosion of flavor. Once you take the first bite, you’ll understand what we mean. You’ll also realize that you have to make this again in the very near future. Is the next day too soon? It most certainly is not!
For the dressing, it’s integral to purchase Thai basil because it is wonderfully aromatic and has a distinct flavor that pairs with the other dressing ingredients. If you are not a fan of spice, you can omit the chili flakes, but they do offer a pleasant heat, which is signature in Thai cuisine. We hope you love it!

Ingredients
For the Salad
- 2 cucumbers, spiralized
- 2 carrots, peeled and spiralized
- 2 tbsp. coconut aminos
- 2 c mung bean sprouts
- 1/3 c red pepper, cut into matchsticks
- 1/2 c scallions, thinly sliced
- 2 tbsp. cilantro, minced
- 1 tbsp. jalapeño pepper, seeded and diced
- 1/2 c raw almonds, chopped
For the Dressing
- 1/2 c raw cashews
- 3/4 c filtered water
- 3 tbsp. freshly squeezed lime juice
- 2 tbsp. raw agave nectar
- 1 garlic clove, minced
- 1 tsp. ginger root, grated
- pinch of red chili flakes
- 1 tbsp. lemongrass bulb, minced
- 1 tbsp. lime zest
- 1/3 c Thai basil leaves, finely chopped
- 1/4 tsp. sea salt
- 1/4 tsp. fresh ground pepper
Instructions
For the Salad
- Add the cucumber and carrot noodles to a large bowl and toss them in the coconut aminos. Transfer to a colander to let them drain while you prepare the remaining salad ingredients.
- Add the cucumber and carrot noodles back to the mixing bowl and combine with the remaining salad ingredients. Set aside while you make the dressing.
For the Dressing
- Add all of the ingredients to a high-speed blender and blend until smooth. Make sure that you do not over-blend. A little texture in your dressing adds extra flavor.
- Pour the dressing over the salad and toss to ensure that all of the ingredients are coated.
- Serve into separate bowls and combine.
