Ingredients
For the Dressing
- 2 tbsp. freshly squeezed lime juice
- 1 tbsp. olive oil
- 1/4 tsp. cayenne powder
For the Salad
- 2 mangos, peeled, and cubed
- 1 English cucumber, halved and sliced
- 1/2 c basil or mint, torn
Instructions
For the Dressing
- In a small bowl, whisk together the ingredients and taste to test the level of spice. If you think you can handle more heat, add another dash or two of the cayenne.
- Set aside while you prepare the salad.
For the Salad
- Add the cucumber and mango to a medium-sized salad bowl and toss gently to combine.
- Add the basil or mint and then drizzle the dressing in the bowl. Toss gently to coat all of the ingredients. Serve and enjoy.
