We’ve made a raw vegan zucchini hummus before, but this is a little different. This dip is all about straight-forward, simple, whole-food ingredients, and it doesn’t contain any oils. It’s extremely easy to make and even easier to eat. All you have to do is prepare some vegetable sticks and start dipping away!
This raw vegan dip contains six ingredients: zucchini, raw cashews, garlic, fresh lemon juice, nutritional yeast, and onion powder. Well, there are eight ingredients if you include sea salt and pepper, but those are par for the course on just about any recipe. Zucchini is naturally rich in vitamin K and magnesium, but also in powerful antioxidants like lutein and zeaxanthin. These antioxidants can help fight early signs of aging and inflammation. The nutritional punch doesn’t stop there, though, because onions and garlic offer impressive flavonoids that may help you control your weight and reduce inflammation. Lemons are vitamin C bombs and nutritional yeast is naturally rich in several B vitamins.
In order to make this dip, we advise using a food processor instead of a blender. You’ll get a smoother consistency if you blend in a food processor. Also, you can choose to peel or not peel the zucchini prior to blending. If you peel them, the color of the dip will be more akin to hummus and won’t have a greenish hue. Because this dip has a silky smooth texture, you can use it in place of mayonnaise if your goal is to be healthier. Just keep in mind that the cashews increase the calorie count of this recipe, so don’t eat the whole thing in one sitting.

Ingredients
- 1 zucchini, peeled and chopped
- 1 c raw cashews
- 3 cloves garlic, minced
- 1/2 lemon, juiced
- 1 tbsp. nutritional yeast
- 1/2 tbsp. onion powder
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
Instructions
- Add all of the ingredients to a food processor and blend until smooth.
- You may have to stop blending, scrape down the sides, and continue blending to ensure that you fully incorporate all of the ingredients.
- Spoon into a serving bowl and serve alongside some freshly chopped vegetables.
- Store any leftover dip in an airtight container in the fridge for 3-4 days.
